Combine one gallon apple cider, 15 to 20 cinnamon sticks, 1/4 cup cardamom pods, 1 1/2 tablespoon whole allspice, 1 1/2 tablespoon whole cloves, four whole nutmeg, zest of two oranges and 1/2 cup dark brown sugar. Bring to a boil, take to a simmer and let it sit for 30 to 45 minutes. Remove from the heat and strain the spices. Serve immediately or chill for later use. -- bourbon, cognac or apple brandy.
